Cornbread for the Vegan Southerner

Cornbread is serious business where I’m from. You get extra points for making it in a cast iron skillet! If you know, you know … you know?

Vegan Cornbread

Equipment

  • 6" skillet or pan (double ingredients if using a 9" skillet or pan)

Ingredients
  

  • ½ cup cornmeal
  • ½ cup all purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt (only if using unsalted butter)
  • 1 tbsp sugar
  • ½ cup non-dairy milk
  • 4 tbsp melted vegan unsalted butter
  • 2 tbsp Just Egg

Instructions
 

  • Preheat oven to 400F
  • Whisk dry ingredients
  • Melt vegan butter
  • Mix wet ingredients separately
  • Mix batter gently until thoroughly combined
  • Bake 20 to 25 minutes until top is golden brown
