Bread Machine: Vegan Brioche Without Trying Too Hard

This is a version of brioche bread that provides a similar sweet richness as the classic using only common vegan ingredients. There’s no fancy pants egg substitutes or other miracles of modern food science required.

This recipe was tested using a humble Cuisinart Compact Bread Machine. It has been adjusted for the Ultrafast (aka Quick) cycle to cater to those of us that are perpetually impatient to taste the results of our latest attempt to elevate the art of vegan cuisine. It creates the 1 lb loaf size that is perfect for individuals, small families, or intimate gatherings when you want to consume all that yumminess in one go.

Ingredients

  • 2/3 cup room temperature soy milk
  • 3 tbsp unsalted vegan margarine
  • 2 tbsp maple syrup
  • 1 tbsp granulated sugar
  • 1 tsp salt
  • 1/2 tsp vanilla extract
  • 2 cups bread flour
  • 1 3/4 tsp instant yeast

Instructions

  1. Add the milk, syrup, sugar, margarine, salt, and vanilla extract to the bread pan
  2. Gently spoon the flour so it sits on top of the liquids
  3. Add the instant yeast to a small well in the flour
  4. Set the cycle to quick, size to 1 lb, and color to medium
  5. Bake!

  2. Does this work with other milks like oat?

    1. I haven’t tried it but I’m almost certain it will turn out ok with just a 1 to 1 substitution. 🤗
