This 60% whole wheat, 40% bread flour recipe strikes an ideal middle ground. This recipe was tested using a humble Cuisinart Compact Bread Machine. It has been adjusted for the Ultrafast (aka Quick) cycle to cater to those of us that are perpetually impatient to taste the results of our latest attempt to elevate the art of vegan cuisine. It creates the 1 lb loaf size that is perfect for individuals, small families, or intimate gatherings when you want to consume all that yumminess in one go.
Ingredients
- 3/4 cup room temperature water
- 1 tbsp maple syrup
- 1 tbsp neutral oil
- 1 tsp salt
- 3/4 cups whole wheat flour
- 1 1/4 cups bread flour
- 2 tsp instant yeast
Instructions
- Combine and whisk flours in a separate bowl to ensure even consistency
- Add the water, syrup, oil, and salt to the bread pan
- Gently spoon the flour so it sits on top of the liquids
- Add the instant yeast to a small well in the flour
- Set the cycle to quick, size to 1 lb, and color to medium
- Bake!
