I knew ChatGPT and I did well with this one when my wife asked for seconds. I also asked the strongest DeepSeek reasoning model to give it a go but it said that I was being a lazy American and to just ask ChatGPT to create one since that’s what it would also do.
This recipe was tested using a humble Cuisinart Compact Bread Machine. It creates the 1 lb loaf size that is perfect for individuals, small families, or intimate gatherings when you want to consume all that yumminess in one go.
Bread Ingredients
- Cake Flour: 1½ cups
- Granulated Sugar: ½ cup
- Baking Powder: 1 teaspoon
- Baking Soda: ¼ teaspoon
- Salt: ¼ teaspoon
- Bob’s Red Mill Egg Substitute: 1 tablespoon
- Plus Water: 2 tablespoons (to hydrate the egg replacer)
- Soy Milk: ¼ cup
- Canola Oil: 2 tablespoons
- Vanilla Extract: 1 teaspoon
- Orange: ⅓ cup fresh orange juice
- Dried Cranberries: 1/4 cup
- Chopped Walnuts: 1/4 cup
Optional Glaze Ingredients
- Powdered Sugar: ½ cup
- Fresh Orange Juice: 1 tablespoon
Instructions
- Whisk the egg replacer and water in a bowl a bit to thoroughly mix it.
- Add the milk, juice, oil, and vanilla extract and whisk to combine.
- In a separate bowl whisk together the flour, sugar, baking powder, baking soda, and salt.
- Add the wet ingredients to the bread pan.
- Spoon the dry ingredients on top.
- Set the cycle to Cake.
- Bake!
- Let cool on a wire rack.
- Glaze.
Cake flour gives it a little lighter texture but you can substitute all purpose flour.
