Vegan Banana Mocha Cream Pie
Quick and easy banana mocha cream pie using silken tofu, chocolate, and instant espresso.
Equipment
- 1 High-speed blender
Ingredients
Custard
- 1 package silken tofu drained and blotted dry
- 1 banana
- 3 tbsp cocoa powder
- 1 tbsp instant espresso powder
- ½ cup melted chocolate chips
- ¼ cup maple syrup
- 1 tsp vanilla extract
- ¼ tsp salt
Pie Assembly
- 1 pre-made vegan graham cracker crust pie shell
- 2 sliced bananas
- ¼ cup chopped walnuts
- 1 cup non-dairy whipped cream
Instructions
Custard
- Blend custard ingredients until smooth
Pie Assembly
- Layer sliced bananas on bottom of pie shell
- Pour custard filling over bananas
- Smooth custard
- Sprinkle walnuts evenly
- Top with whipped cream
- Chill in the fridge for at least 2 hours
