Vegan Banana Mocha Cream Pie

Quick and easy banana mocha cream pie using silken tofu, chocolate, and instant espresso.

Equipment

  • 1 High-speed blender

Ingredients
  

Custard

  • 1 package silken tofu drained and blotted dry
  • 1 banana
  • 3 tbsp cocoa powder
  • 1 tbsp instant espresso powder
  • ½ cup melted chocolate chips
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • ¼ tsp salt

Pie Assembly

  • 1 pre-made vegan graham cracker crust pie shell
  • 2 sliced bananas
  • ¼ cup chopped walnuts
  • 1 cup non-dairy whipped cream

Instructions
 

Custard

  • Blend custard ingredients until smooth

Pie Assembly

  • Layer sliced bananas on bottom of pie shell
  • Pour custard filling over bananas
  • Smooth custard
  • Sprinkle walnuts evenly
  • Top with whipped cream
  • Chill in the fridge for at least 2 hours
