Ur Mom’s Yummy Cinnamon Swirl Rolls

If these had been made in my house growing up, they would have come from a can, and baked by my sister or me. My mom was literally taught by my dad how to make boxed macaroni and cheese when they first married, and never progressed much beyond that level with her culinary ability.

Equipment

  • 1 Bread Machine (I used the Cuisinart Compact Bread Machine)

Ingredients

Sweet Dough

  • 1 cup non-dairy milk room temperature
  • 3 tbsp non-dairy butter just melted but not hot
  • 2 tbsp sugar
  • 1 tsp salt
  • 3 cups bread flour all-purpose will also work
  • 2 ¼ tsp yeast dry active or instant

Filling

  • 3 tbsp non-dairy butter softened
  • ¼ cup light brown sugar
  • ½ tsp ground cinnamon

Icing

  • ½ cup powdered sugar
  • ¼ cup non-dairy butter softened

Instructions

Sweet Dough

  • Add the ingredients to the bread pan in the order listed. Gently spoon in the flour and place the yeast on top.
  • Run the Dough program.
  • Pour the dough onto a lightly floured surface.
  • Roll the dough into a rectangle that is about ¼ inch thick.

Filling

  • Mix the powdered sugar, butter, and cinnamon.
  • Spread evenly onto the rolled out dough.
  • Starting from the long end, tightly roll the dough into a log.
  • Cut the log into 1.5 inch sections.

Baking

  • Place the roll sections into a 9" x 13" baking pan.
  • Cover with plastic film or a clean towel and let rise for 30 minutes. They will look noticeably fatter.
  • Bake at 375 F for 12 to 15 minutes.

Icing

  • Mix the powdered sugar and butter.
  • Spread the icing onto the warm rolls so it melts a bit and gets its ooey-gooey-ness into all the nooks and crannies.
